SAPERAVI
  • Our Saperavi wine is a testament to the meticulous artistry and dedication that goes into crafting each bottle. Cultivated from specially selected Saperavi grapes, meticulously planted in our esteemed vineyards in Vachnadziani in 2015 and Shashiani in 2019, this exceptional wine embodies the essence of our unique terroir.

    Nestled at an elevation of approximately 400 meters above sea level, these two distinct vineyards offer a mix of different types of soils – the meadow brown of Shashiani and the alluvial, highly variegated alternating, and stony oils of Vachnadziani. These diverse elements converge to create a wine with intriguing taste properties and robust aromas, accompanied by an exquisite color extraction.

    The grapes, carefully hand-picked in the early morning of late September, undergo a gentle crushing before finding their home in stainless steel tanks. A 20-day maceration period follows, ensuring the perfect extraction of tannins and color. The wine is then delicately separated from the skins and moved into a new tank for malolactic fermentation.

The journey continues with the aging process, where the wine matures in stainless steel tanks, and a portion finds its home in French oak barrels for an enriching period of 4 months. The result is a dark, rich wine with a deep purple hue, adorned with enticing aromas of blackcurrant, blackberry, and ripe cherry, complemented by subtle notes of light sweet spice.

On the palate, this Saperavi unfolds gracefully, offering a prolonged finish characterized by refined tannins and well-balanced acidity.

QVEVRIS KISI
  • Embark on a sensory journey with our Qvevris Kisi, a wine crafted with passion from Kisi grapes cultivated since 2018 within the heart of our vineyards in Shashiani.

    At an elevation of 430 meters above sea level, the vineyard's soil boasts a distinctive blend of meadow brown, stony, and moderately fertile characteristics. The true essence of this wine lies in the unique marriage of the vineyard's soil structure and the surrounding natural climate, each contributing to its exceptional character.

    In late July, we conducted a green harvest in the Kisi vineyard, carefully removing ripe grapes to limit the yield to 8 tons per hectare. This deliberate reduction aimed to achieve a concentrated juice in the remaining bunches, fostering intense and structured aromas pivotal in shaping the distinct taste profile of our Qvevri wine.

    As September unfolded, the hand-harvested grapes, nestled in small boxes, underwent a gentle crushing. The grape juice accompanied by the skin, found its home in small-volume clay vessels called Qvevri for a fermentation journey that lasted up to 6 months.

Every step of this process, from the initial harvest to the time spent in the Qvevri, was carefully executed by hand, minimizing mechanical impact, and ensuring a delicate infusion of sharp aromas extracted from the grape seeds and skins into the wine.

The result is a wine adorned with a golden hue and exuding the captivating aromas of dried yellow fruits, reminiscent of quince, peach, and apricot. On the palate, Qvevris Kisi unveils a symphony of ripe, velvety textures accompanied by gentle tannins, inviting you to savor the unique and artisanal qualities that define this exceptional creation.

QVEVRIS SAPERAVI
  • Vineyard Specifics: Planted in 2015 in our Vachnadzian vineyard, the third plot distinguishes itself. Situated at an elevation of 410 meters above sea level, the soil is alluvial and highly variegated, alternating between cherty and fertile compositions. The summer temperature is notably high, with less precipitation. Implementing a green harvest at the end of July ensures a limited yield of 5 tons/ha.

    Tasting Note: This wine showcases a prominent varietal aroma of Saperavi, accompanied by notes of blackcurrant, dried black plum, ripe cherry, and blackberry. The palate reveals a distinct character, balanced with elegant, ripe, and velvety tannins, culminating in a long finish.


SAPERAVI SINGLE VINEYARD
  • Vineyard Specifics: Planted in 2015 within Vachnadziani, our vineyard underwent a meticulous selection of plots with alluvial, cherty, and fertile soils. Situated at an elevation of 450 meters above sea level, the chosen plots were subjected to a green harvest at the end of July, strategically limiting the yield to 5 tons per hectare.

    Tasting Note: This wine unveils a dark ruby, brick-hued appearance, emanating aromas of red fruits, ripe cherries, sweet spices, and a smoky mineral bouquet. The palate is harmoniously balanced, featuring full-bodied, elegant, and velvety tannins.

  • Since 2002, Tbilvino has been dedicated to crafting exceptional "Reserve" wines, a tradition born out of collaboration with our esteemed Australian wine consultants. This commitment is proven by our decision to make red wines of this distinguished category from our own Vachnadziani vineyard grapes, a journey that began in 2018 and continues to flourish.

    In the 128-hectare Vachnadzian vineyard, intricately divided into 17 plots, our viticulturists and winemakers discovered a hidden gem during the 2018-2019 plantings - the fourth plot. This plot, born of meticulous observation and passion, stood out with its remarkable ability to accumulate sugar in the grapes and yield intense, uniquely derived aromas that captured the imagination of our winemaking team.

    What sets this particular plot apart is its distinct soil structure, characterized by the interplay of meadow brown soil, alluvial layers from the Vachnadziani ravine introduced years ago, and broken rocks with a gritty mass, all contributing to a moderate stony environment. This unique combination imparts a special character to the grapes, ensuring moderate vine growth and, ultimately, the creation of wines with stable structural aromas that gain complexity during extended aging.

Recognizing the unique potential of this plot, our winemakers embarked on a journey to craft a wine that would epitomize its singular qualities. The decision to conduct a "green harvest in the fourth plot was made, resulting in a limited and higher quality harvest of 4-5 tons per hectare. This meticulous harvest took place in early August when the grapes were at 50% of veraison.

Saperavi Vachnadziani Plot #4, is a wine distinguished by cold pre-maceration before fermentation. This process done at low temperatures allows a very gentle color and aromatic extraction, in an environment that is without alcohol. So the extraction is low, progressive, and very gentle. This meticulous process yields a wine with full body, and velvety, balanced tannins. After spending 24 months in the barrel, the wine showcases the distinct aromas of the vineyard, and as it continues its aging journey in the bottle, its allure only deepens.
